Position Title: Sous Chef

Supervisor: Executive Chef Manager

Department: Facilities

Grade: 56, exempt, non-union

Hours: Full-time onsite 40 hours per week, 7:00 AM to 4:00 PM, Monday – Friday

Summary

This position will be responsible for assisting the Executive Chef Manager collaborating and working with the Dumbarton Oaks community to provide daily dining services for lunch in the Refectory and special events.

The Refectory at Dumbarton Oaks is special to the community and fosters a unique, collegial environment for staff and scholars to exchange. In addition to serving in the Refectory, the Sous Chef will partner with the refectory team, facilities, and events staff to provide a world-class dining experience for global distinguished guests who are invited to guest lectures, concert dinners, symposia, and other events.

Duties and Responsibilities

  • Ensure the preparation and presentation of high-quality food in accordance with the established menu while meeting target meal costs. Assist behind the food line (when needed)
  • Implement and monitor inventory management system, complete weekly inventory audits and assist in weekly ordering
  • In collaboration with the Executive Chef Manager, develop menus and recipes, including menus for special event dinners
  • Plan and execute simple to complex catered indoor and outdoor events including, but not limited to, house events, campus-wide events and symposium, colloquium events.
  • Ensure kitchen equipment and related physical space are sanitized, organized, operational, and in good repair. Submits requests for repair if necessary. Work dishwasher station (when needed)
  • Assist in basic computer and salesforce related data entry and reservation system management
  • Assist the Executive Chef Manager in forecasting and budget preparation
  • Develop and maintain positive and professional relationships with students and fellows. Provide outstanding customer service and ensure diets and other nutritional needs are met
  • Other duties as assigned

Supervisory Responsibilities

Occasional supervision and leading staff at functions and events in the absence of the Executive Chef Manager.

Qualifications

Basic:

  • High School diploma or equivalent specialized training in Culinary arts
  • Minimum of two years progressive culinary management experience in developing quality food program in a college, residential, restaurant, or non-profit setting.
  • The National Food Safety manager certificate.

Additional:

  • Associates or bachelor’s degree in Culinary Arts.
  • Proficiency in Microsoft Office applications (Word, Outlook, Excel).
  • Operational knowledge of industrial kitchen equipment (dishwasher, oven, ventilation systems, etc.).
  • Operational experience with a variety of foodservice applications and computerized menu management systems. Ability to learn and adapt to new systems and applications as needed.
  • Strong communication (verbal, written, interpersonal) skills and an ability to communicate effectively with a diverse constituency.

Licenses and Certificates:

The National Food Safety manager certificate.

Physical Demands

Must be able to physically perform the duties of the position, including but not limited to the ability to move heavy furniture, stand for up to 2 consecutive hours, kneel, bend, stoop, climb and push, pull, and lift up to 50 pounds.

Working Conditions
