Ashley Thuthao Keng Dam is a final-year PhD candidate in ecogastronomy, education, and society at Universita degli Studi di Scienze Gastronomiche and a Senior Research Fellow at the Center for Khmer Studies. Thao holds a BA in anthropology from St. Mary’s College of Maryland and a MSc in medical anthropology from the University of Oxford. In the past, Thao has done research on maternal nutrition in the Gambia. At present, Thao’s PhD dissertation research focuses on the use of Traditional Khmer (food-)medicine among populations living in Siem Reap province, Cambodia, during periods of human ecological instability with special attention to those made with foraged and gathered plants.
